How nice to welcome June this week, as we wrap up the graduation season here in my family. We had three graduations and this Aunt Maureenie is busting with pride over these very special niece and nephews. My heart, my habibis. Yesterday out for a walk, we passed a fellow grad-mom and she just shook her head and said, "it's an emotional season." TRUTH! But then my brother Chris, grad-dad of my nephew John (here's a must-read story about that) saw me starting to lose it at the graduation and gently said, you know, it's best to focus on being happy for the kids. I agreed, and that really did help me hold it together across the board the last month. And I am so aware of how blessed I am to get to experience this kind of joy as an aunt who has been welcomed into their lives.
Lots of get-togethers, lots of great food! All of the hosting brings on the realization that some foods are better made for crowds (shawarma) and others for the smaller table gatherings (smash burgers). I am trying to decide if our menu this week, Fresh Herb Falafel with Tahini Sauce, is for a small group or a crowd? Once you start frying, you figure you should just go for it and make a lot. But also falafel is best eaten hot out of the fryer, which means eat-as-you-fry.
Okay, just decided: Falafel for the smaller table. Which we have most of the time. So let's falafel this week (and save the recipe for summer flavor)! My recipe is for a very herb-packed, very fresh-flavored, protein-packed falafel. You can even freeze the "dough," which makes quick falafel possible.
With so much going on, we don't want to forget that Father's Day is coming June 16th! You send wonderful Father's Day gifts from our shop every year, and we are standing by to make it happen right now with spice sets, Lebanese olive oil, baklawa, and so much more.
Bless your hands, and your grads,
Fresh Herb Falafel.
Putting this fabulous recipe front and center so we can all remember how very (VERY!) delicious homemade falafel can be. Far better than anything you can get in a restaurant, hands down. Crispy exterior, moist interior. No special tools required for shaping. Also know this: falafel is high in plant protein and fiber.
This is a great time to bake pita bread at home, for your falafel. The size of the pita are perfect, and they split apart so nicely to hold falafel, tahini sauce, turnip pickles, cukes, and anything else you can think of to stuff in the pocket for deliciousness.
