It happens every summer.
- Zucchini season starts, and I'm THRILLED.
- It continues, and I love it.
- It keeps going, and I'm like...
What am I supposed to do with all this zucchini?!
...which is where I'm at right now.
To help me work through my summer squash stash, I spent the week revisiting zucchini recipes that I hadn't made in a while. Here's what I made:

I definitely recommend adding these zucchini boats to your rotation this summer! They're surprisingly simple and SO flavorful, especially with dollops of pesto on top.

These lemony, savory fritters are crispy on the outside and light and tender in the middle. Serve with tartar sauce or a dollop of tzatziki.

I forgot just how moist and chocolatey this easy quick bread is. Swipe a slice for breakfast, and circle back later for dessert.
