JULY 2023 My New Roots Monthly Hi dear one, It's July! Can you believe it?! As I warmly embrace summer in all her glory, what better time to dive into the refreshing world of cucumbers. You may be surprised to learn that cucumbers are actually a fruit (though most call them a vegetable), and while these fruits may seem unassuming at first glance, they're actually quite rich in essential nutrients! It's true that these cooling fruits are made up of about 96% water, making cucumbers the OG hydration heroes! But they're more than just a vessel for water, they also provide a dose of vitamin A, vitamin K, and important minerals like calcium, potassium, and magnesium that are especially beneficial for strengthening our bones! Traditionally, cucumbers have been used in Ayurvedic medicine to naturally relieve bouts of constipation. Their high magnesium levels help to hydrate the gut while their teeny-tiny seeds work their magic to reduce heat within the body. These wonders, along with other electrolytes cukes bring to the table, keep our digestive systems running seamlessly - let's celebrate THAT! Want to know another cool fact? Cucumbers contain special polyphenols called lignans and studies have shown that these compounds interact with C-reactive protein levels, working to lower LDL cholesterol, aka: the kind that's best in lower numbers. These wondrous fruits truly love on our bodies by fighting free radical damage, reducing inflammation, and naturally slow the aging process caused by oxidative stressors. There are dozens of cucumber varieties found all over the world, such as English, Lemon, Japanese, and Armenian cucumbers to name just a few.
