Hi reader!
Like many parts of the world, we're in the middle of a major heat wave here in Iowa. π₯΅ As I've gotten older I find my appetite lowers as the temperatures rise and I'm looking for light and refreshing meals more than ever right now.
With that said, today I am sharing over 10 summer dinner recipes to beat the heat. With the exception of one dish, none require an oven, and ALL are fresh, light, and healthy to get us through this heat wave.
Pencil one or more of these recipes into your meal plan this week (we had this last night!) and don't miss my favorite light and refreshing side dishes down below!
