So, in our house, we eat a bit of everything. You guys know that Eddie is quite the carnivore, but when it comes to my dinners, I almost always prefer something meatless. It's usually what I'm craving! Of course... there is probably cheese involved too.
There are tons of meatless recipes in my new book, Everyday Dinners, and I wanted to highlight a few of my favorite veg-friendly meals!
The Crispy Orange Cauliflower with Coconut Rice is DIVINE. It has so much flavor, texture and leftovers are even great the next day. The combo of the orange with the mild coconut rice flavor is incredible.
The Smoky Black Bean Burgers will blow your mind. These burgers are actually baked (yes!!), allowing them to come together quickly and easily. They are also one of my favorite meals to prep for lunch - and there are many ways to enjoy them.
The Cajun Lime Sweet Potato Bowls hit the spot. They are savory with a hint of heat and perfect as a side in the summer or a warm winter grain bowl in the winter.
The Roasted Italian White Bean Spaghetti has so many flavors that I love. Beans are one of my favorite foods and they add so much satiety to this dish. This is a wonderful entrée or side dish - and even a great one to take to a dinner party!
