Wait a minute, wait a minute! How did we get here, to the last week of June? Please tell me time is flying for you, too. There are many irons in the fire/things happening at once here. Some very special project work is taking up the kind of time and energy that keeps me from getting notes off to you as regularly as I'd like! I can't wait to share more about that special work when the time is right, but I'll be back to sharing more recipes with you during the weekdays ASAP.
Here at home amid the busy, we're eating plenty 'o take-out, and Dan and I can both say we're ready to get back to homemade food. "We like our own food," Dan says. Agreed. Our meals lately are often nosh-y style, mezze, which is great because the many parts allow for some (or none) homemade and store-bought. We keep hummus, labneh and other dips on hand, along with veggies and olives and pita chips or pita bread to build a decent mezze. We'll buy stuffed grape leaves at a local restaurant and jazz them up by cooking them again briefly in some lemon juice. That feels almost homemade and tastes great. Scroll down for some dinner-in-a-snap recipes that help us have homemade dinner when time is tight.
My sister-in-law has been making "dessert mezze," creating a platter or board with a variety of treats. She tucks in orange blossom caramels, apricot chews, some good cookies, maybe some slices of a pound cake, fresh fruit. Sounds so good! I can't wait to try it and I can't wait to bake a pie soon, too.
Bless your hands, and may they find some rest,
Shakshuka.
My back-pocket, no-time and nothing-to-eat eats! Eggs poached in diced tomato sauce. Flavor it up with what you have. Here it's labneh, avocado, cilantro, and za'atar.
The rice pilaf go-to, loaded with pieces of roasted chicken and topped with nuts. Sometimes I buy a rotisserie chicken and that makes quick work of this delicious, satisfying dish. I recently had hushweh without the ground meat in it; just rice, vermicelli, nuts, and chicken. It was wonderful and that's an even faster avenue (also great for no-meat eaters).
A quick marinade using 7 Spice is a flavor explosion, with ease. The recipe roasts the chicken but it will be excellent on the grill, too. Try my 7 Spice blend and it'll quickly become a go-to!
