My current lunch fixation! I prep on Sunday and enjoy all week.
I mentioned this make-ahead lunch option that I've been loving in my newsletter and had so many requests for a recipe! I truly can't get enough of it.Kale, cabbage and carrots get finely chopped in the food processor, saving loads of prep time. I can get this one prepped up and ready to go on Sunday in about 30 minutes if I focus. All I have to do at lunch throughout the week is assemble!Topped with chickpeas and avocado, this is a hearty vegan main course salad. The creamy, sweet, and tangy mustard dressing is my favourite part though! I would drizzle it on pretty much anything haha. Enjoy π | | | | | Be well and happy cooking! Laura
