First: thank you, THANK YOU!, so much for your kindness, prayers, and love with my note last week about my skin cancer and treatments. I'm beyond touched and so blessed by you. Healing is on the way, though I am realizing it's going to take a little time. I'm doing the things that bring comfort: baking, cooking, and diving into my books. Like many of us, I loooove the old Lebanese cookbooks handed down and collected. One of the centerpieces, Lebanese Cuisine by Madelain Farrah, was recently revised and re-released by her daughter, Leila Habib-Kirske. I've been so excited about this book that I reached out to Leila to ask her if I could offer her book--signed!--in my shop. She said yes!

This book (here) has taught me a lot, and I continue to turn to it as a kind of Sitto-on-the-shelf. It's Leila's mother-on-the shelf. She told me that in the remaking process, she found her mother's stews in the book a special surprise she hadn't made before. There's always something new to explore, even for those of us who make these foods all of the time.

Make or buy a roasted chicken and serve this most adored, simple rice pilaf with shredded chicken in with the rice or on the side. Nut topping (optional!). Anytime anyone needs comforting, we make hushweh.
Very seasoned, very simple, very delicious. I share this often with my menus because it's a very-often-salad. Most nights and especially hushweh night!
