Dal Palak represents so much of what I love about Indian cuisine. The fusion of flavors is a feast for the palate and this dish is as nutritious as it is flavorful. I developed this recipe years ago and it produces the most wonderfully light, fluffy and chewy texture! But toasted...oh, it is downright irresistible! Delightfully crispy on the outside and chewy on the inside with juicy sweet raisins and the warmth of cinnamon, it's pure heaven!
