We can't stop with the "summer FLEW by" sentiment lately. Part of that is how short, yet intensely good, the harvest is up here in Michigan. We get tomatoes like the ones in my Pomegranate Caprese Salad for a few fleeting weeks, so we go all-in eating them every day. This week a great line-up to plan for: tomato salad plus lamb chops, grilled Chicken Shish Tawook, Roasted New Potatoes with Mint, and Lebanese Salata too.
The marinade makes these juicy and unforgettably good! Make a whole bunch then eat the chicken throughout the week over salads and wrapped in pita. Be sure to push the chicken off the skewer before serving for ease of eating!
