Around here, we certainly don't boast hot, well-prepared breakfasts every morning of the week, but when cold cereal is getting old (or, ahem, is all gone), these are a few of my favorite go-to breakfast recipes.

Many of the recipes have a make-ahead or overnight option so that breakfast is easy and stress-free even on busy school mornings.


#1 Fluffy Baked Pancakes

There is definitely something extraordinarily brilliant about spreading pancake batter in a pan and baking it. These baked pancakes are fluffy, delicious and easy.

#2 Easy Overnight Amish-Style Baked Oatmeal

This easy overnight oatmeal is one of our most-made breakfasts (and easily one of my kids' favorites). I quickly throw it together the night before and bake it the next morning. The leftovers are delicious, too!

The batter for these waffles is prepped the night before and refrigerated. When cooked the next morning, the waffles are so light and fluffy!

#12 Make-Ahead Refrigerator Bran Muffins

Another huge favorite around here, these bran muffins are a tried-and-true recipe from my mom (I ate them all the time growing up!). The batter can be made and kept in the fridge for days so you can bake the muffins when you need them. The baked and cooled mufifns freeze great, too!

#13 Peanut Butter and Honey Banana Muffins

Speaking of muffins, these PB honey and banana muffins are exceptional! They can be baked, cooled and frozen...but they are pretty darn easy to whip up when you want them. Nothing beats a fresh-from-the-oven muffin.

#14 Honey Almond Granola

One of our go-to snacks and breakfasts is granola and Greek yogurt (sometimes berries, too, if they haven't gotten wrinkly in the fridge yet!). This honey almond granola is fabulous! It keeps well in the pantry for several weeks.

These blender pancakes are 100% whole grain and so light and tender and tasty. They are thinner than many other pancakes, and we love them for that reason. A favorite for us!
