An emergency meal from Dinner to try this week - BAKED chicken fried rice! No need to worry about leftover cooked rice, this is made with uncooked rice from scratch. It's the chicken version of the baked fried rice on my website with chicken added. Nope, it wasn't as simple as plonking soy sauce seasoned chicken on top!!
