Hello reader Last week's day trip to the Isle of Wight already feels like a long time ago. We crossed the island by bus and met up with our friends at Quarr Abbey. Sadly the weather wasn't up to much and we all got a bit damp, but it was lovely nonetheless. Luckily summer is returning, or so they say. That means salad is back on the menu. This week's recipe is for a refreshing and most delicious griddled nectarine salad. Despite the griddling, it's actually quite quick and easy to make and if you have ripe but firm nectarines it's a lovely thing to do with them. Add some tomatoes, mozzarella, basil and a fabulous dressing and you're good to go. I've spent much of this week trying to sort out some of the old We Should Cocoa posts. We Should Cocoa was a monthly blogging challenge where bloggers had to create a recipe with chocolate and a chosen ingredient or type of bake. So for example there is a collection of chocolate and blackcurrant recipes, one for chocolate layer cakes and one for chocolate ice cream. There are many others. It ran for eight years and although it stopped in 2018, it's left an amazing archive of chocolate recipes. So if you ever fancy making something with chocolate and you're stuck for ideas, do take a look at the We Should Cocoa page.
