Happy holiday weekend, friends!
I'm currently in Portland, Maine with Miguel and a couple of friends, and we're headed to Boston tomorrow to explore (I've never been!). Since I'm writing this email in advance, I can only hope that as you're reading this, I'm in a complete food coma (lots of restaurants planned).
I hope you're able to relax this weekend and whatever you do, make sure good food is on the menu. Recipes below!
This Halloumi Lentil Salad is made with cooked lentils, roasted tomatoes, cucumber, and pan-fried halloumi, along with a simple zesty dressing. It's a fresh, healthy vegetarian lunch that you'll want to make all summer long. The flavors are so refreshing and the halloumi really just takes this salad recipe to the next level!
Roasted carrots and garlic are transformed into a healthy party dip in this Carrot Hummus recipe. Easy to make with a handful of simple ingredients, it's a naturally vegan snack to serve with veggies and pita for dipping. Perfect for a summer appetizer or just a simple weekday snack!
Cook your veggies in half the time with this Air Fryer Vegetables recipe! Cooking vegetables in the air fryer is a quick and hands-off method that yields tender and caramelized veggies using less oil than oven-roasting. On those extremely hot summer days when the oven would just make everything so much more toasty, this air fryer recipe is just perfect!
This Healthy Chicken Alfredo is a creamy and craveable dinner that showcases pan-seared chicken breasts and al dente noodles tossed in a veggie-loaded homemade alfredo sauce. It's the lightened-up version of classic fettuccine alfredo and it is such a comforting pasta dish. It's a certified hit with my husband and he is always asking if we can make this recipe!
Forget everything you know about complicated veggie burgers! These Buffalo Chickpea Burgers are easy to make, ready in less than 20 minutes, and don't fall apart. Plus, they're loaded with protein and a spicy kick! I love prepping these on a Sunday to have for lunch all week!
Mini Vegan S'mores Cheesecakes
These Mini Vegan S'mores Cheesecakes are made with a graham cracker crust, cashew-based middle and topped with chocolate ganache and a marshmallow. Now that July is here, these cheesecakes just scream summer bonfire and I just love s'mores so much because of how it makes me think of summer nights!
If you make any of these recipes, be sure to leave a comment and star rating on the blog and let me know what you think – I love hearing from you!
