It's officially April 1, so I wanted to share this Pesto Grilled Cheese with you all -- oh my it is so cheesy and gooey! And the pesto really adds a tasty spring-like feel to the grilled cheese. I've had this for lunch every day this week (not ashamed)!

Pesto Grilled Cheese
Ingredients:
Almond Pesto recipe
2 tablespoons butter
2 slices thick bread (sourdough, Italian)
2 slices provolone cheese
1/2 cup shredded white cheddar cheese
Directions:
1. Make the almond pesto (or use your favorite store-bought pesto).
2. Add desired amount of pesto to the two slices of bread, then butter the other sides of the bread.
3. Add the one slice of bread butter-side down into a nonstick skillet, then place the cheese on top of the bread. Add the other slice of bread butter side up on top.
4. Cook the sandwich over medium heat for 3-4 minutes on the first side until the bread is golden brown, then carefully flip it over and cook until the cheese is melted. Slice and enjoy!
