Hello reader Summer has well and truly arrived here in the UK. With temperatures soaring, it's already too hot for me. But the upside is that salads now come into their own. No need to put the oven on or cook anything at all. Just delicious seasonal fruit and veg with flavoursome zippy dressings. I really relish them at this time of year. This week's post is one such: Spanish white bean salad. It's a substantial dish, but a most delicious one. It's good as a main meal all on its own, or why not serve it as a side or tapas. It's best made in advance, so great for parties, potlucks and picnics. If you clocked the two recent bean episodes of The Food Programme on BBC Radio 4, you'll know that Spain is into beans in a big way. The Spanish are one of the longest lived peoples on the planet and it's likely that part of the reason is their substantial bean consumption. Cue my white bean salad made with butter beans, peppers, tomatoes, olives and a garlicky sherry vinegar dressing. I also like to add a little smoked paprika, but that bit is entirely optional. Tomorrow brings me into a new decade. It's really quite scary how the years are flying by. To celebrate / forget we're heading to the Isle of Wight for the day with our new bikes and lunching at Off The Rails. I've heard good reports of this lunch time eatery and the menu looks interesting. I'll report back.
