Bar Cookies that make the Cookout (Including vegan, gluten-free option!).

Easy-to-eat bar cookies are in rotation here all summer long. Fresh Strawberry Jam Bars kill it, and so do Blondies with caramel and tahini. The classic chocolate brownie with Mom's Chocolate Buttercream frosting is also here to stay. And, consider the chewy heaven that is a good homemade granola bar with dates and dried apricots dessert-worthy. Oh, and my Vegan Apricot Power Bars? That's a gluten-free YES!
