~ Fire it up! ~ The grill is a centerpiece of Mediterranean, and specifically Middle Eastern, cooking. We do kebabs--skewered meats and vegetables turned over an open fire--with mouthwatering flavors. Kebabs are never served on the skewer, but pushed off to a platter and eaten from there. So metal is the skewer of choice, for sturdiness and push-ability. Use a big piece of saj bread (flat bread) or pita to push the meat off, then use that flavorful bread and to scoop up the juicy grill and have at it. Our all-time favorite grills are Lamb Shish Kebab, Chicken Shawarma, and Garlicky Sumac Shrimp. And another favorite that throws on the grill so easily is my Pomegranate Flank Steak. The marinade is an excellent tenderizer and flavor-maker for this cut of beef. Get ready for a delicious Memorial Day and summer ahead, around the grill. | |
