You know when you peek at a new menu and everything sounds kinda great? Are you familiar with those days where you're feeling like decisions are hard and you just want someone to tell you what's good? Well, here we are! We have some recs for you. A new recipe plus some old faves to fill out your kitchen plans for the week.
We are NOT a sad-salad bunch around here. WE DEMAND ACTUALLY EXCITING AND DELICIOUS SALADS. Especially in the summer. Don't you dare try to ruin our summer nights, sad-salads.
So for this week, we're focusing on truly fun, satisfying and delicious summery salad options. And this new Elote Style Quinoa Salad is definitely going to zazz things up. Bright, nutty, and totally satisfying, with quinoa, black beans, velvety peppers confit, plus piles of fresh juicy sweet corn! Taking inspiration from the best of the best flavors of elote (Mexican street corn), the creamy homemade dressing includes zippy lime, salty cotija cheese, and chili powder. Drizzling that on top of all the fresh raw sweet corn and other chompable greats? Whoo boy, what a summer party! And as always, we have big love for ALDI for having everything we need for this dream to come true.

Corn, Avocado, and Quinoa Salad with Marinated Tomatoes
As long as we're talking raw corn this week, let's put those beauties with their sweet crunch into this bright, nutty, summer-as-all-get-out quinoa salad. Avocado is everyone's cool best friend, and we definitely love it tossed in here. And who would we even be without a little creamy, salty cheese like cotija in our lives? But those marinated tomatoes…WOWOWOWOW. What a star.
Are you ever like, "Salad is on the menu tonight but also, what if it was pizza?" Yeah, who isn't? Let's pile a salad ON a crisp-crackery crust, shall we? With the bright homemade Italian dressing, this one feels more "chomping pile" and less "salad." So it's really a summer win all around.
Attention everyone! It's time for an All-American kale drench! You know the one. Where you douse that power green with a creamy avocado-based Caesar dressing that is absolutely void of anchovy but brimming with zing. Throw in your other salad faves, and we haven't even mentioned the sweet potato fries yet because we saved the best for last.
Yes, you will use pre-cooked beets and a juicy orange or two, and yes, that burrata DOES sound fancy but you can definitely just buy it at the store. Take a hot sec to shake some homemade dressing up in a jar but also, any fave vinaigrette you have in the fridge would do. And, please oh please if you have 5 minutes, whip up some unbearably delicious fried bread that will tuck in just perfectly to every bite.
Okay, there's a lot going on here but in the very best way. This salad is heavy on the good-for-you stuff with spinach, black beans, sweet potatoes, and also heavy on the hey-well-that's-a-fun-surprise with the pistachios, feta cheese, and bossy summery lime basil vinaigrette. An unexpected zip to your summer plans!
