Hello Everyone!

 

I hope that you are all having a wonderful summer so far and enjoying some time outside! It's been so hot outside lately that I thought this would be a great month to share some popular Korean cold noodle dishes with you. There's really nothing as refreshing on a hot summer day as a bowl of noodles with fresh veggies or icy cold broth - and many of them are fairly easy to make!

 

Also, the 4th of July is this weekend!! πŸ‡ΊπŸ‡Έ Although I know that many people typically grill, I wanted to share a different and fun idea, aside from Korean BBQ - a Bibimbap Party!! The great thing about Bibimbap party is that you can make all the toppings ahead of time and serve at room temperature. No last minute heating up - except just keep the rice warm!

 

If you are having guests, you could even make it potluck style and have each guests contribute a side/bibimbap topping and then you can enjoy it all together. Just lay them all on the table and then everyone can build their own bowl! 🍚πŸ₯’

 

Don't to cool off with some shaved ice desserts or homemade ice cream!

If you don't have access to a Korean grocery store, here's a bibimbap version that uses more everyday vegetable toppings. You just need radish (Daikon will do), bean sprouts, carrots, asparagus, shitake mushrooms, zucchini and beef! 

And this recipe shows you how to make a Dolsot Bibimbap with crispy burnt rice bottoms!!

Make it patriotic for 4th of July by using red and blue fruits with white mochi pieces! Or enjoy Subak Bingsu - my favorite version topped with scoops of fresh, sweet and juicy watermelon! πŸ‰
