Good Morning, my Dear Friend! How are you this morning? It feels like forever since we chatted! (Whose fault is that? Mine! I know!). I'm back from my vacation and it was lovely, thank you. How was yours? Did you take a vacation or at least a "stay cation" and rest and relax at home a bit? I don't know about you, but the heat is so oppressive here that there isn't much you can do except take a break! I would love to hear back from you and know where you've been and what you are doing, just shoot me an email in reply to this newsletter and it will go straight to my in box (no one else will see it) if you ever want to let me know something. Now, ON WITH THE FOOD! I know that it is hot summer time, but I've been working on pressure cooker recipes A LOT! Want to know why? Because I can cook up a wholesome delicious dinner, in minutes WITHOUT overheating my kitchen and without having to stand out in the heat at the grill (opening the door repeatedly and letting the AC out and those darned flies in)! Anyway, I've got some super delicious recipes coming your way and here are a few. (They work in any pressure cooker: Stove Top (that's what I have and what's in the pictures), but they will also work in your Instant Pot or other electric pressure cooker too). There's this VERY FLAVORFUL Pressure Cooker Chicken Curry, I mean, it isn't southern, but it also isn't any other nationality either because I jushed it up for American tastes. Think "grandma's gravy and rice with a fun twist". Then there's this simple and easy Pressure Cooker Beef Stew, it freezes great and is easy to do. Beef stew was on sale at the grocery and we had some garden carrots, so this was a no brainer. Pressure Cooker Chicken and Dumplins are an easy win. You use the pressure cooker to quickly cook the chicken and then use the pot to cook up the rest of it. YUM! There are more and they are the latest recipes I've done so they are all lined up at the top of the website if you want to go see. _________________________ HOT COOKING TIP OF THE WEEK Here's something hot for your cooking..... cook anything in your kitchen when it's in the 90's outside. You'll be hot in just a minute or two! LOL!!!! Naw.... I won't do that to you.... This week, I have a tip based on something I did just this week. I have a few kitchen hand tools that are wearing out and I need to find replacements. Sure, I can go on Amazon and something will be delivered in a few days BUT... I find that it's far more expensive that way PLUS I can't tell the quality of the item (unless I'm familiar with the brand) AND I really like to hold something in my hand, feel the weight of it and know if I'm going to like it or not BEFORE I buy it. This is especially true for hand tools that I use a lot in the kitchen. Anyway, my kitchen spider is worn out. The coating is worn off of it and everything is starting to hang and stick to it. The handle is a little loose. Although, I love that tool, it's time for it to go. I also needed a few bigger boy no spill cups for the grand baby and a plastic liquid measure for my pottery "studio". Where do I go for these things? I always start at Big Lots. They tend to have super nice quality kitchen hand tools for a pretty low price. I was able to replace my spider with a "Kitchen Aid" brand one, I bought two new baby no spill cups, a plastic measure, a few spices and a Kitchen-Aid brand plastic liquid 2 Cup measure ALL for $18. Everything is very nice quality. I see a similar kitchen aid spider on Amazon for $18, so.... see? That one thing for the price I paid for the whole kit and caboodle. Try Big Lots for Kitchen Hand Tools, if you haven't already. I'm not talking about appliances (like coffee makers), I haven't checked those out, but the hand tools (whisks, wooden spoons, that kind of thing) are mostly pretty nice. ______________________ YouTube Do you know that you can watch the recipes that I make over on YouTube? It's free and I try real hard not to make them longer than 5 minutes long. It's a great way to put eyeballs on a recipe and know what it should look like at various stages. I keep my camera trained on my hands and the dish so you know what's happening and I do a voice over to explain what is happening, give tips and tricks and hints at how to make this the perfect recipe.
