Hello reader I hope you found last weeks courgette recipes useful. Have you made any of them yet? Our courgettes are still coming thick and fast and it's courgette for virtually every meal. So far, I've made the vegan courgette pasanda from the list. It was really delicious. But as well as courgettes, blackcurrants are very much in season here in the UK right now. Blackcurrants are a pain to pick, but they're so worth it. Delicious and chock full of antioxidants. A few years ago, I stopped making blackcurrant jam and started making blackcurrant chilli jam. The chillies don't give it a kick so much as a gentle warmth, but they really add something. I had the recipe buried in another post, but I've now given my blackcurrant chilli jam its very own spot in the limelight. It deserves it. Really it's just an easy, small batch blackcurrant jam recipe with added chilli. But if you don't like the idea of chilli, just leave it out and you'll still have a sweet, tart and fruity flavoursome jam. I've been eating it with shortbread and clotted cream for a quick, easy and delicious dessert. In fact I'm nearly out already, so I'm going to make a slightly larger batch today. Last week I managed to get the dreaded tax returns done. Phew! What a relief. Last year I left it almost to the last minute and it was a bit stressful. I've also managed to update a few posts this week. I'm on a continual quest to make them more informative and easier to read and to give proper printable recipe cards, pins and better images. Some of my older images are truly shocking. You may have already discovered some. Please do let me know if you make any of my recipes and don't forget to star rate them.
