Here's your MEAL PLAN for the week! πŸ‚

Happy November!

I hope you had a happy Halloween, however you may have celebrated this year. We were lucky enough to have beautiful weather (despite the fact that it had SNOWED on Monday!), so we spent most of the day outside and made homemade granola bars that look like "mummies."

I also made a batch of homemade elderberry syrup. Did you know that elderberry extract has been shown to reduce the duration of flu symptoms by an average of 4 days when taken within the first 48 hours of symptoms appearing?



I always try to share lots of research when I write the posts on my website, so be sure to check it out for more potential benefits of elderberries.


New Recipes

If you haven't visited my website this week, here's what you might have missed:

Kale Pesto. This is one of the most delicious ways to eat a whole bunch of kale! All you need is 5 minutes to whip it up, and then you can use it over pasta and veggies, or on your favorite pizza crust.

Ginger Tea. Ginger has long been used in traditional medicine, and may potentially aid digestion and reduce nausea. This tea is a great way to get a daily dose of ginger, and it takes only 5 minutes to prepare!


Your Weekly Meal Plan

Need some dinner ideas for the week? Try the recipes below!

Sunday: Lentil Bolognese. Vegetarian comfort food, loaded with plant-based protein. It's also delicious stuffed into a baked sweet potato!

Monday: Eggroll in a Bowl. It tastes like your favorite take-out, but it's really just a delicious way to serve a bunch of veggies in a single meal!

Tuesday: Kale Caesar Salad with Roasted Chickpeas. This simple salad dressing is creamy and flavorful, and the chickpeas add a filling, savory topping!

Wednesday: Vegan Meatloaf. If you like to experiment with Thanksgiving recipes before the big day, this is one to try! It's a great vegetarian main entree, but it's also easy & delicious enough to prepare anytime.

Thursday: Mexican Chicken Soup. This is an old recipe, inspired by the flavors of tortilla soup. If you prefer to keep things vegetarian, there's an option for that, too!

Friday: Sweet Potato Pizza Skillet. All the pizza flavors you love, but in a more vegetable-centric dish.

Saturday: Leftovers or Take out! (Day off from cooking)
