I was a bit MIA last week aside from a few emails I drafted ahead of time and sent out. I'm not going to lie, it has been kind of dreamy to be offline (I deleted Instagram for a while) and focus on being present with my family for these last few weeks of school leading into summer.
Tomorrow my 17-year old son heads off to the Philippines with a group of youth (and adult leaders) to do humanitarian work for 2 1/2 weeks with HXP. It's wild to think he and my 20-year old son serving a church mission will be in the Philippines at the same time. They likely won't see each other, but that's ok, because my 20-year old gets home from his mission five days after his brother gets back from his trip!
I finally finished watching The Count of Monte Cristo (new mini-series on PBS) and absolutely loved it. We also went and saw the new Michael Jackson movie as a family. It was so good - surprisingly thought-provoking and we talked about it for a long time afterward. I grew up listening to Michael Jackson's music; my childhood best friend and I choreographed our own dances in the Texas heat on my small back patio with a boombox and cassette tapes to so many of his songs. I still remember all the moves to Man in the Mirror and might just pull that out of the memory bank tonight and show my kids. Lucky them! 😜
I'm excited for the recipes I am sharing with you this month! Think: the most incredible summery berry cake, an air fryer chicken recipe that is exceptional, and the fry bread everyone's been asking me about!
