I know when holidays fall on a Sunday, it can be really hard to get any type of prep done.
And anytime I go into the week with nothing prepped, I feel like I’m already behind the eight ball before Monday even starts.
So for this week’s bonus recipe, I wanted to send over one of those super easy dinners you can keep in your back pocket: pita pizzas.
I almost always have ingredients on hand to throw these together. You can keep them really simple with sauce, cheese, and pepperoni, or you can use whatever leftovers you have in the fridge to make them a little more fun.
Here are a few simple combinations to try this week:
Classic pepperoni pita pizza: Pizza sauce, mozzarella, turkey pepperoni, and Italian seasoning.
Mexican pita pizza: Shredded Mexican chicken, salsa or taco sauce, shredded cheese, peppers, onions, and a little avocado after baking.
Cheeseburger pita pizza: Seasoned ground beef, cheddar, pickles, tomatoes, shredded lettuce after baking, and a drizzle of burger sauce.
Chicken parmesan pita pizza: Marinara, cooked chicken (leftover baked chicken parm is awesome), mozzarella, parmesan, and Italian seasoning.
Greek pita pizza: Olive oil or hummus, spinach, tomato, red onion, feta, mozzarella, and a little tzatziki after baking.
This is one of those recipes that doesn’t need to be fancy to be helpful.
