With Father’s Day coming up this weekend, I know meal prep can feel a little tricky.
This past week, I shared four of my favorite burger recipes in case you’re planning to grill or make burgers for Father’s Day. If you missed them, here they are again:
Holiday weekends are fun, but they can also make it harder to get ahead for the week - especially when the holiday falls on a Sunday.
So this week’s mini prep plan is all about keeping things simple.
These are easy recipes you can prep on Saturday, throw into the slow cooker, or pull together during the week without a ton of extra work. Because even with a holiday weekend, we still have to eat next week.

Slow Cooker Mexican Shredded Chicken
The slow cooker does all of the work, and then you can use the shredded chicken in tacos, burrito bowls, salads, quesadillas, nachos, or lettuce wraps.

Cheeseburger Stuffed Peppers
Since we’ve been talking burgers all week, these Cheeseburger Stuffed Peppers are a fun way to keep that burger flavor going without making another traditional burger.

Slow Cooker Sausage and Peppers
This is such an easy dinner for a busy week. Lean poultry Italian sausage, peppers, onions, and sauce cook together in the slow cooker until everything is tender and flavorful. Serve it as is, in a roll, over pasta, or with a simple salad on the side.

Prep-Ahead Tips for This Week
Slow Cooker Mexican Shredded Chicken
- Make the chicken over the weekend and store it in the refrigerator for quick meals during the week
- Shred the chicken once it’s cooked and portion it into containers
- Freeze extra portions if you want an easy meal starter for another week
Serving ideas
- Tacos with lettuce, cheese, salsa, and avocado
- Burrito bowls with rice, beans, corn, and toppings
- Quesadillas, nachos, salads, or lettuce wraps
Cheeseburger Stuffed Peppers
- Cook the filling ahead of time and store it in the refrigerator
- Prep the peppers so they’re ready to stuff and bake
- Assemble the stuffed peppers ahead if you want dinner ready to go during the week
Serving ideas
- Serve with a simple side salad
- Add roasted vegetables or sweet potato fries on the side
- Top with pickles, shredded lettuce, or a drizzle of burger sauce for more cheeseburger flavor
Slow Cooker Sausage and Peppers
- Slice the peppers and onions ahead of time
- Add everything to the slow cooker insert the night before and store it in the refrigerator
- Start it in the morning and dinner is ready later in the day
Serving ideas
- Serve in rolls with provolone cheese
- Serve over pasta, rice, or cauliflower rice
- Add a simple salad or roasted vegetables on the side

Cherry season is here, so this is the perfect time to make these Black Forest Overnight Oats.
They’re chocolatey, filled with cherries, and taste like a healthy breakfast version of the classic Black Forest dessert. This is an easy one to prep ahead so breakfast is ready to grab during the week.

Amazon Tools That Help With This Week’s Recipes
I’m keeping this week’s tools focused on the recipes in this meal plan.
Cherry pitter
If you’re buying fresh cherries from the store or going cherry picking, a cherry pitter is such a helpful little tool to have on hand. It makes prepping cherries for overnight oats, smoothies, snacks, and freezer bags so much easier.
Indoor grill pan
If you don’t have an outdoor grill, or you just don’t feel like firing it up, an indoor grill pan is a great tool to have in your kitchen. I use mine for burgers, chicken, vegetables, wraps, and quick weeknight dinners.
It’s especially helpful if you’re making any of the burger recipes from this week.

This is my go-to slow cooker. I’ve had it for years, and I use it every single week.
It’s the one I use for shredded chicken recipes, slow cooker sausage and peppers, soups, chili, and so many other crockpot meals. If you’re trying to make weeknight dinners easier, a good programmable slow cooker is definitely one of the tools I’d recommend having in your kitchen.
