Hi reader, We're experiencing our first true heat wave, and I can't tell you how refreshing my Korean-Style Beef Bowls are as a light yet filling lunch or dinner. Inspired by Korean bulgogi, ground beef flavored with tamari, green onion, ginger, garlic, and a touch of sugar is scooped over rice, then topped with crunchy, tangy, fresh and pickled veggies - plus a drizzle of spicy mayo. It's a flavor bomb! ๐ฃ Best of all, the dish comes together in the time it takes to cook a pot of rice, and every ingredient is a fridge or pantry staple. I have a feeling this one's going to earn a permanent spot in your simple summer recipe rotation!
