Chicken burgers don’t always get the best reputation.
A lot of times, we think of turkey burgers or chicken burgers as dry, bland, or boring - and honestly, they definitely can be if they’re not seasoned well or cooked the right way.
They’re made with ground chicken breast, Italian seasoning, garlic, Romano cheese, marinara sauce, and melty mozzarella. The secret to keeping them juicy is a simple panade, which is just breadcrumbs and milk mixed together to create moisture in the burger.
So instead of a dry chicken burger, you get a juicy, flavorful, Italian-inspired burger that tastes like chicken parmesan in burger form.
This is one of those specialty burger recipes that feels fun and different but is still simple enough for a weeknight dinner.
If you want to start grilling more, these are the three tools I’d start with:
๐ A cast iron grill pan. If you don’t have an outdoor grill, a grill pan is such a great tool to have in your kitchen. I use mine all the time for burgers, chicken, vegetables, wraps, and anything I want to cook with that grilled flavor. Honestly, I use my grill pan even when I do have access to the outdoor grill because it’s quick, easy, and works year-round. This is the grill pan I use.
๐ A good set of grill tools. A sturdy spatula and tongs make grilling so much easier, especially when you’re cooking burgers outside. I use my grill tools mostly for outdoor grilling, but I’ve definitely grabbed them for indoor grilling too. ๐ An instant-read meat thermometer. This comes in handy all the time, especially with chicken and turkey burgers. Ground chicken needs to be fully cooked, but you also don’t want to overcook it and dry it out. A meat thermometer takes the guessing out of it and helps you get juicy burgers that are cooked perfectly. This is the meat thermometer I have.
Meal Prep Tips
These Chicken Parmesan Burgers work great for meal prep, especially if you want easy protein ready for the week.
✅ Make the patties ahead of time. Mix the ground chicken, breadcrumbs, milk, sauce, cheese, and seasonings together, form the patties, and store them in the refrigerator until you’re ready to cook.
✅ Always, use parchment paper between patties. Ground chicken can be sticky, so parchment paper makes it much easier to separate the patties without them falling apart.
✅ Freeze the patties for later. Form the burgers, place parchment paper between each one, and freeze in a freezer-safe bag or container. Thaw completely before cooking.
