A classic recipe that's ALL about the bran π
I have been working on this muffin recipe for a bit. With my previous attempts, I was trying to incorporate things like cocoa, berries, and streusel--basically trying to make a bran muffin that tasted like a chocolate, berry etc muffin. The bran flavor was too powerful every time though!
When I finally embraced the nutty, slightly sweet qualities of the wheat bran itself, that's when I started getting somewhere. Cinnamon, vanilla, dark brown sugar, and molasses enhance the bran (without a hockey puck texture). These muffins are tender with perfectly puffed up tops.
