These buffalo cauliflower fritters are so delicious, they almost made the cover of Easy Everyday! Buffalo Cauliflower Fritters Makes 10 to 12 fritters Time: 35 minutes 4 cups cauliflower florets 2 large eggs, lightly beaten ½ cup all-purpose flour ½ cup finely grated sharp cheddar cheese ½ cup crumbled blue cheese 2 green onions, thinly sliced 3 tablespoons buffalo wing sauce, plus more for serving 3 tablespoons chopped fresh cilantro ½ teaspoon garlic powder ¼ teaspoon salt ¼ teaspoon pepper fresh chives, for serving yogurt blue cheese sauce for serving (recipe in Easy Everyday) Fill a skillet or saucepan with 1 inch of water and heat it over medium heat. Once simmering, add the cauliflower and cover the pan. Steam it for 3 to 4 minutes, just until the cauliflower is slightly tender. Strain the cauliflower through a strainer. Chop the cauliflower into small pieces. Mash half of the cauliflower pieces with a fork or potato masher. In a large bowl, stir together the flour, egg, cheeses, wing sauce, green onions, cilantro, garlic powder, salt and pepper. Fold in the pieces and mashed cauliflower. Heat a large nonstick skillet over medium heat. Add the olive oil 1 tablespoon at a time. Once the oil is hot, drop ½ cup scoops of the cauliflower mixture onto the pan. Cook for 2 to 3 minutes per side until golden and crispy. Transfer the fritters to a paper towel-lined plate to remove excess grease. Serve with a sprinkling of chives, an extra drizzle of wing sauce and yogurt blue cheese sauce! xo Curated Cravings is a reader-supported publication.
