Made with butter, light brown sugar, and tangy sourdough starter (you can use sourdough discard too) it's perfectly moist, fluffy, and not-too-sweet.

The buttery crumbles on top are my favorite 🥰

You can make this cake now, or ferment the batter overnight in the fridge to maximize flavor and digestibility. If choosing the overnight option, baking the next day is a breeze: just pop the cake pan into the oven (cold) and wait until it's done.
