Happy weekend, friends! I'm spending some quality time with Tony here on the West Coast before heading back home to Chicago, hugging the kiddos, and then starting the final leg of my book tour. This week was a whirlwind! We had 3 incredible book tour stops on the West Coast, followed by the BEST news that my cookbook made it on the New York Times Best Seller List. I can't say it enough but THANK YOU to all of you who bought, have rated, and cooked from The Ambitious Kitchen Cookbook so far. I have a few more cookbook-related surprises up my sleeve over the next week or so -- keep an eye on your inbox! For now, enjoy the perfect fall menu to make this week. Grab tickets for the LAST week of book tourI just have 4 cities left this week for the bulk of my book tour, and I'd love to see you. Chicago, Dallas, Houston, and Denver friends -- grab your tickets below! I'll be heading to Boston later in November, too, so get those tickets here early.
5 recipes to cook this weekBreakfast: Spiced Zucchini Apple Baked Oatmeal with Cinnamon Vanilla Glaze The perfect end-of-summer, early fall breakfast that uses up both zucchini AND fresh apples. This easy, delicious baked oatmeal is filled with tons of warming spices and topped with a perfectly sweet glaze for the best start to your day.
Lunch: Actually, the Best Vegetarian Chili Ever A meat-free chili that's ACTUALLY filling, flavorful, and sooo satisfying. Pack in the veggies with sweet potato, bell pepper, corn, and carrots, plus plenty of plant-based protein from black beans. Add your fav toppings for a wonderful lunch.
Snack: Pumpkin Pie Smoothie Ready for the first pumpkin recipe of the season? Good, me too. Blend up the creamiest, dreamiest smoothie that tastes JUST like pumpkin pie and packs over 15g of protein!
Dinner: Butternut Squash and Black Bean Enchilada Skillet One of my absolute favorite dinners to make this time of year. Get the cozy deliciousness of enchiladas without the hassle of rolling by mixing everything right in one skillet, topping with plenty of cheese, and baking it to perfection. This one's a great Meatless Monday meal!
Dessert: No Bake High Protein Peanut Butter Cereal Bars I love making these easy treats for my kiddos especially now that school has started. They're naturally sweetened, filled with peanut butter flavor and crunchy cereal, and topped with a layer of chocolate. Keep them in the fridge or freezer for a dessert that kiddos AND adults will love.
If you make any of these recipes be sure to leave a comment and a rating so I know how you liked it! |
