I started seriously exploring cooking during the Bordeaux era and I'd try to mimic some of my favourite dishes made by my mom...without really knowing how to make them properly. The results were sometimes catastrophic but I'd say the beef brisket was edible. The major issue was that the cut of beef wasn't really brisket, I felt. Improvements have definitely been made in the past ten years though 😉
