Good morning and welcome to my love letter to cauliflower, the vegetable out here really doing the most. 🫡 It roasts beautifully as a simple little crisped-up veg, but is also down for being mashed, riced, fried, blended, and remains seriously delicious in whatever it chooses to be. So three cheers for cauliflower! Our dinnertime unsung hero.
#1: Butter Cauliflower and Chickpeas with Mint Cilantro Sauce
This Butter Cauliflower and Chickpeas is a new weeknight staple! Roasty spiced cauliflower, a jar of butter sauce, a can of chickpeas, and a pile of steamy rice with a waterfall of mint sauce on top.
"I've never made gnocchi, but I had a head of cauliflower and wanted to do something different than my usual go-to roasting. This was phenomenal. My husband is already asking me to make it again." - Emily
"I've come back to this recipe so many times over the years. So simple and so delicious. We will often do a double batch and freeze. The fact that I can take a scoop of this and toss it into a frypan to reheat and crisp is so fantastic! Thanks for a staple in the house that all us meat eaters happily enjoy." - Kath
"I thought these were great, but they rocked my husband's world. He kept coming over to me while I was doing dishes and saying, 'I really, REALLY liked this one.'" - Erika
"This was absolutely delicious and my whole family enjoyed it immensely. The cauliflower rice is nutty and the texture of the baked tofu is a worthy extra step and simply perfect." - Ethel
"I finally got around to making these this week for lunch. O.M.Geeee! So good! My husband loves anything Buffalo-flavoured, but not a fan of cauliflower. Let me just say – he LOVED these. It will definitely be added to the regular rotation!" - Melissa
"This was very, very good and so simple! I am not always a huge fan of cauliflower, but this was seasoned beautifully. Thank you for an easy weeknight meal that felt like a treat!" - Cindy
