Welcome to your weekly meal plan!
Feedback from last week's meal plan was awesome — I'm so excited that YOU'RE excited! That said, here's what's on tap for this week:
Your Weekly Menu
Monday: Pasta Fresca. Add diced chicken or shrimp, and/or use lentil or chickpea pasta to pump up the protein in this meal. Or just enjoy the fact that it's ready in 15 minutes as written, and is a complete meal in one.
Tuesday: Italian Sub Salad. Make extra to take for lunch tomorrow. You can also save time by using store-bought crispy chickpeas - I love Biena brand.
Wednesday: OMG-Good Goulash. We like to jazz up this goulash by sprinkling shredded cheddar cheese on each person's bowl. Or use shredded mozzarella plus chopped pepperoni to turn it into Pizza Pasta.
Thursday: Crock Pot Italian Beef Sandwiches. Canyon Bakehouse has an excellent GF hoagie roll (be sure to warm or toast it first) otherwise I eat the shredded meat plain with a huge side salad, or fresh-cut veggies. Add all the ingredients into your crock pot the night before then pop it onto the base and start cooking in the morning.
Friday: Pizza Chicken. Because this recipe uses chicken cutlets (chicken breasts sliced in half lengthwise) it cooks in minutes. Serve with pasta or roasted spaghetti sauce and extra sauce, or garlic bread.

WEDNESDAY Goulash is basically one pot spaghetti, and is so versatile. A family favorite for sure.
