I can't stop making this cake. Plus: Loaf Pan Peasant Bread, Pizza Book Update & More

Sometime around Valentine's Day, I made Nigella Lawson's dense chocolate loaf cake, an old favorite recipe, but one I hadn't made in ages because my children don't love chocolatey desserts.

Or so I thought.

My oldest, upon trying it, asked if the cake was going in the pizza book and was disappointed to hear it was not. A few days later, when the cake had disappeared, she asked if I would make it again, which I did, and when that loaf disappeared, she asked if she could make the cake, which she did.

As she was mixing, she turned to me and said: "No offense, Mom, but you should have made this for us sooner."

No offense, Mom!

Growing up, my mother hated that expression and forbid my siblings and me from using it — along with "whatever", which was a worse transgression than swearing — so I can't help but bristle upon hearing anyone say it. This, however, made me laugh. No offense, Mom.

I apologized for not introducing the family to the wonder that is chocolate cake sooner and promised to make up for the years of deprivation. Ella was relieved.

Friends, if you like a very moist or, as Nigella says, "squidgy" cake, this one is for you. It takes no time to throw together, and it stays squidgy for days.

PS: Orange and Olive Oil Cake falls into the squidgy-cake category as well.
