Mason Jar Salad Challenge Day 10: Spicy Thai Salad in a Jar ๐Ÿฅ—๐Ÿ 

Woohoo, you made it! This is the last day of the Mason Jar Salad Challenge. You'll likely be eating salads for the rest of the week, but if you made it until today, you have officially crossed the finish line!

For the last day, I'm going to highlight this Spicy Thai Peanut Salad, inspired by one of my favorite salads from Panera. It's a lot more high maintenance in the preparation department, but don't let that stop you. Once you have these salads put together, you'll love the ease of this tasty salad every day.

This Spicy Thai salad includes crunchy purple cabbage and cucumber, roasted sweet potatoes, edamame, quinoa, and greens and is dressed with the most delicious homemade Spicy Thai peanut dressing.

Speaking of this Thai dressing, if you have leftovers, then drizzle some on a bowl of shredded chicken, broccoli, and rice for an easy, delicious dinner.

Cooking tips

The roasted sweet potatoes take the longest to prepare for this salad, and I recommend making them a day before if possible. Sometimes, I'll sprinkle chili powder over the sweet potatoes before cooking, and other times I leave them plain. Either way, roasting sweet potatoes brings out the best flavor. Cut the sweet potato into small cubes for even cooking, so you get a small taste in each bite.

Quinoa is another salad ingredient that requires cooking. Again, try to make it the day before. And, if there are leftovers, use them in this sausage kale or Greek breakfast bowl. Yum!

If you can find shelled edamame in the produce or frozen section, then grab that to reduce preparation time.

Shopping Tips

Edamame is not the easiest to find; it isn't for me. I usually find a bag in the freezer section next to the other frozen vegetables. If it's not shelled, thaw it out and remove the edamame from the shell.

Pre-shredded cabbage is in the produce section next to the other bagged greens and veggies. If you have leftovers, use them in this shrimp-fried rice recipe.

Do you vacuum seal your mason jars?

No, I do not. I fill the jars with ingredients and tightly place the lid on. I recommend purchasing extra plastic lids because, over time, the metal lids that come with the jars will start to rust. You can buy lids on Amazon or wherever you purchase mason jars.
