Happy Saturday!
We have zero plans this weekend, and I couldn't be more excited. Honestly, we'll probably end up doing some yard work, I have a dessert recipe that I need to retest and I'm hoping to make it to a yoga class at some point. All and all just a chill and relaxing weekend, and I hope you have the same!
Today I'm sharing my most recent recipes below, along with a few extras for your meal inspiration:
Creamy Pumpkin Pasta is the savory pumpkin recipe you NEED. Typically when I think of pumpkin I don't think of pasta ...until now. It's filled with sausage, spinach and parmesan and it's just so tasty. A direct quote from my neighbor who I shared some with, "I can't get over how delish the pasta is!!"
Moist Apple Cake is loaded with spices, apples and walnuts, then topped with a simple maple buttercream. It's a nice change of pace from pumpkin, and only 1 layer so it's very low maintenance.
Think: roasted acorn squash filled with wild rice, mushrooms and chickpeas, then drizzled with a dairy-free bΓ©chamel sauce. Vegan Stuffed Acorn Squash is a delicious meatless meal, and the filling can be prepped ahead of time to make this even faster.
This Air Fryer Tilapia has been trending lately, and for good reason. Breaded fish cooked in the air fryer so it's crispy, then drizzled with melted butter for good measure.
I can't tell you how much I adore this recipe. Chicken thighs, potatoes and carrots cooked low and slow so you can set it and dinner will be ready to go. A very delicious and healthy hands-off meal.
Soft Pumpkin Cookies made with both almond flour and coconut flour, making them both gluten free and paleo-friendly!
