It's extra work but completely worth it! Brining increases the liquid content in the meat. That means even as you're cooking the turkey, and it's losing moisture, you've provided extra moisture to keep it juicy.
TURKEY TOOL Use a brining bucket. My stepdad, who cooks the juiciest turkey ever, swears by his brining bucket. It keeps the turkey from floating in the wet brine, is easy to clean, and you don't need to fuss with a brining bag. Use it for chicken and other meats too!
