Happy first day of October!
Can you believe it?! I've been loving the cooler weather, though feeling a little sad about less daylight. It is what it is! Our agenda this weekend includes going out to breakfast at a new-to-us breakfast spot this morning, then heading to a brewery with friends at night and hopefully getting tacos at some point on Sunday. Oh, and of course grocery shopping!
Sharing my most recent recipes with you all, along with a few extras for your meal inspiration:
I *literally* cannot stop with cottage cheese recipes. This cottage cheese lasagna is my new go-to method for making lasagna -- basically using cottage cheese instead of ricotta!
If you love matcha, these cookies are for you! They're classic snickerdoodle cookies made with butter, cinnamon and sugar, but with a little matcha added in. Trust me, they're delicious.
Am I a crazy dog lady? Yes. Do I sometimes make my dog her own dog food? Also yes. While I don't do it all the time, it's super easy to make your pup very delicious homemade food.
This bowl is trending right now, and for good reason -- it's the perfect fall lunch recipe! Arugula is topped with sweet potato, apple and chickpeas and drizzled with a simple tahini dressing. YUM!
Caramelized Onion Spaghetti Squash
Three cheers for squash season! Though butternut squash is my favorite, spaghetti squash is a close second, and this is always my go-to recipe. If you love caramelized onions, I highly recommend you give this one a try.
I always have to include a chicken recipe, because chicken is a must-make for weekly meal prep. This is my favorite way to cook bone-in chicken thighs!
