Ropa Vieja is one of Cuba's most famous dishes. In fact, it's so beloved that it's designated as one of the country's national dishes. Featuring shredded beef, vegetables, and spices and served with rice and beans, it is the epitome of comfort food.

This cake is truly something special. Pears, warm spices, nuts and caramel... it's the perfect way to usher in autumn!

Studded with juicy ripe pears, the crumb of this cake is wonderfully moist. It's topped with a rich and gooey toasted walnut caramel sauce that is positively irresistible.

Sometimes it's those simple comforts that hit the spot best!

I grew up in health-conscious home where things like boxed Hamburger Helper meals were only served on very rare occasions. But I'll admit that as a kid I enjoyed those less-than-healthy boxed meal occasions. Hamburger Helper Cheeseburger Macaroni and Tuna Casserole....they tasted pretty darn good! At least to a kid who wasn't yet concerned about long lists of indecipherable ingredients on the nutrition labels.

I've created a copycat, from-scratch version of Cheeseburger Macaroni that by comparison has a tiny list of ingredients - all of which are readily identifiable and easy to pronounce! And guess what? Not only is this made without any junk ingredients, it also tastes WAY better than the boxed stuff! AND it's ready to serve in just 20 minutes, win-win!
