The smoky, bright, delightfully spiced North Indian dish known as Baingan Bharta is always a favorite this time of year. The name of the dish literally translates to "mashed eggplant," but I don't think that really does it justice.
Consider this the Indian version of baba ghanoush, and prepare yourself for a flavor explosion! I learned this recipe from my Mother-in-Law. It is absolutely packed to the brim with the bright flavors of tomatoes, onions, smoked eggplant, and a bevy of delightful Indian spices. YUM!
