I love pie but I don't always love making pie. Getting the crust in the pan, filling it just right, trying to get that first slice out (I have occasional nightmares about trying to cut the first slice of a pie). After reading the notes from our most recent retest of pie pans though, I think I might have just had the wrong equipment this whole time. The right pie pan will not only bake a perfectly brown crust, it will actually allow you to remove a pie, whole and intact. That's the sort of thing that can turn those nightmares of mine into blissful dreams.
