Weekly Update (Weigh-in, Meal Plan, and More) May 29th, 2022

Hey there reader,

I hope you're having a lovely weekend. We spent a lot of time getting our house ready for summer and today we are heading to a barbecue at a friend's house. I'm making this Gluten-Free Italian Pasta Salad.

We are in the home stretch of the school year, so it's crunch time. I have all of the end of the year activities, and I'm also trying my hardest to prep and plan for having my kids home this summer. I've learned the hard way that if I'm not ready for the summer, then it's stress x100.

So some of the things that I make it a point to do every year before school lets out is this:

  • Stock my freezer with meals. Breakfast burritos, baked oatmeal cups, energy balls, shredded chicken, marinated chicken, and other quick meals are key once summer hits. I'll talk more about this next week.
  • Get ahead with work. Thanks to Covid, we all know it's a challenge working from home when kids are there. My kids are 17 and 15, so you'd think they are more independent, but I guess nobody makes a smoothie like mommy does. I know I'll miss it when it's gone. The key to not losing my mind when the kids are home during the workday is 1. Getting up super early and 2. Planning and scheduling ahead.
  • Stay on routine. This time of year, it's easy to get overwhelmed and off of routine, but staying on schedule with meal planning, exercise, and everything else gives me that sanity I need when everything else is chaos.

Okay, let's get to the weekly update.

I decided to go old school this week and write a weekly update for the blog. I haven't done this for a long time, and I explain the reason in my post. But moving forward, I decided to go back to my roots and share my weekly weigh-in, meal plan, and goals for the week on my blog.
