Hey there reader,
So, I'm writing this weekly newsletter today from my car. Most of the time, I wake up early and take some time alone with me and my coffee to put together this newsletter.
But today, I woke up late and then rushed out the door to help my daughter with a full day of dance pictures. She is old enough to get herself ready on her own, but I hang out in the parking lot just in case she needs me. Anyway, today I have my Yeti cup full of coffee and my computer on my lap writing to you from dance pictures. 👋
I should also mention I didn't even get a chance to go grocery shopping this weekend because yesterday was my oldest daughter's junior prom, so we spent the whole day getting ready and then taking pictures.
Anyway, I'm going to try to get groceries after dance pictures today, but if I'm being honest, I'm most likely going to get home and pass out on the couch. I'm 100 percent exhausted!
So, I will do the grocery shopping and meal prep tomorrow. I hate going into the week without any food prepped, but sometimes it just happens. However, I will put easy recipes on the menu this week to make it easier, and I'll list some options out below.
Okay, here are my goals for this week.
- Take Monday to get a good workout in and also make sure our food and house are in order for the week. If I don't do this tomorrow, I'll be a hot mess all week.
- Continue with a daily smoothie and extra veggies at dinner time.
- Drink 64 ounces of water a day. I get a lot of hydration in with smoothies, but I need more, so I'm going to track my water intake this week.
- Exercise 5 days. I need to step up my exercise game. I've been feeling sluggish lately, and I think it's because I'm not pushing myself with exercise.

Sunday Family Dinner
Once a week, I like to "splurge" on a comforting Sunday Italian dinner. Last week, I shared my new project, Gluten-Free Italian Eats, so I'll share recipes from that blog in this section. These recipes are gluten-free, but you can make them either way.
GF Baked Ziti is one of my favorite Italian recipes to make during busy weeks. It's so easy to throw together, and the leftovers keep great. It goes great with this homemade gluten-free caesar salad.
