| Hello reader It's another busy week for us here at Tin and Thyme HQ. Luckily it's half term next week and I get some respite from my other job. We have visitors and that means cake. One of the bakes I've made for our visitors is a pineapple juice cake. It's an easy traybake made from the juice leftover from a carton of pineapple juice that we had for breakfast with previous visitors. Not surprisingly it's a juicy cake with a lovely spongy texture. The cake really tastes of pineapple, but for additional flavour I've drizzled it with pineapple, lime and chilli syrup. Oh my, what a delicious cake it is. I've also made a non-vegan version of my banana and peanut butter muffins, which, although good are not as good as the original.
