Italian Tomato and Bread Soup (Pappa al Pomodoro)

The dreary rain just won't stop around here, so today we're coming to you with coziness.
Deep, unimpeded, sweet tomato flavor with swirls of garlic and rich velvety olive oil, bright fresh basil and, listen to this, your hunky crusty bread dips are already included!
Make way for tomato and bread soup also known as Pappa al Pomodoro. Pappa al Pomodoro hails from the Tuscany region of Italy, and it essentially translates to "tomato mush." Ours is a little thinner than a more traditional Pappa al Pomodoro, but you can certainly thin or thicken to your heart's content. But any way you have it, it is definitely all the yum. Just, all of it.
We sprinkled on some Parm and some crushed red pepper and, of course, more swizzles of olive oil and just, oh my, SO good. Beautifully simple, fresh, rich, and delicious.

amazing mushroom bowls with kale pesto
These marinated mushrooms…WOWOWOW. They're smoky, sweet, salty, and the 👏 most 👏 amazing 👏 partner to the roasted sweet peppers and caramelized pineapple (yes!). The kale pesto is the stuff green dreams are made of. And, if you really can't muster to mushroom, tempeh is a seriously delicious alternative.

A definite fave taco situation! Smoky, rich beans & greens filling with crunchy, fresh sweet corn in there for bright summery-ness. But also let us please warn you that we are pouring an extreme amount of spicy, herby aji verde (a Peruvian green sauce) all over these. It's all just so wonderful. Plus, how fun is it to say "Beans & Greens"?! So fun. So good.

Creamy and cheesy but without any of the cheese. It's velvety and rich and cozy – basically a soup that gives you a hug for lunch. Packed with carrots, celery, broccoli, and more! So much veg, so much yum.

Did you know John Legend is in love with these pancakes? We're pretty starstruck about it and not to be toooo braggy, but these pancakes are AMAZING. Light, fluffy, joy-filled, and blueberry-speckled. Get some maple syrup flowing and you have yourself a real Mother's Day treat!
