May 27, 2022 Reminder: FSIS Seeks Comments on Pork Performance Standards As announced in the March 25, 2022, Constituent Update, the comment period on proposed pathogen reduction performance standards for Salmonella in raw comminuted pork and raw pork cuts was extended until June 2, 2022. The extension was requested by stakeholders. FSIS announced in the February 16, 2022, Federal Register that it is requesting comments on the proposed performance standards. FSIS is also requesting comments on how it plans to assess whether establishments producing these products are effectively addressing Salmonella using a moving window of FSIS sampling results. FSIS Posts Recorded Webinars on Revised Appendices A & B On May 23 and May 24, 2022, FSIS hosted webinars to provide an overview of the revised 2021 Cooking Guideline for Meat and Poultry Products (Revised Appendix A) and 2021 Stabilization Guideline for Meat and Poultry Products (Revised Appendix B). The webinars also provided an opportunity for participants to ask questions.
