| Hello there! I'm extra-excited about today's meal plan, because there's a new feature on my website that I think you're going to love... a customizable meal plan + shopping list!! This was sparked by a conversation in our private Facebook community this week about saving & organizing recipes. Using an app to save my recipes, without actually visiting my website to get the recipe, may eventually lead to the downfall of free recipes on the internet. I personally depend on people visiting my website (and leaving reviews-- don't forget to leave one after you try a recipe!) in order to keep my website afloat, so I really appreciate it when you visit my website, rather than saving it to an app on your phone. You know how much I test, and re-test, my recipes so they are fool-proof for you, so this is a huge help. Literally the best thing you can do to support a food blogger you love, is to simply visit their website and interact in the comments! It's easy + free. However, I also know that these apps are in business because they offer the convenience of adding recipes & creating a shopping list. So, I think I've figured out a solution for you. I am not a super tech-savvy person, but I'm very excited about this option. How it Works For this week's meal plan, I created a template on my website that YOU can customize! If you don't like a recipe that I picked for dinner this week, you can remove it. I try to walk you through the steps on my new Weekly Meal Plan page, so be sure to read everything there! Want to add breakfast and lunch? You can add an item to any day of the week. And then, you can create a shopping list! You can adjust the number of servings for each recipe, and if you do this on your mobile device, you can literally take this shopping list to the store with you and cross off items as you go. It's so interactive! There's definitely a learning curve with this new feature, so please share any feedback, and let me know if it's helpful. After all of the air fryer experimenting I was doing on Instagram the other week, I realized that it's the most practical to bake fries in the oven, if you want to make enough for 4 people at once! This method will give you crispy results every time. How to Make Chickpea Flour. I had no idea how easy it was to make chickpea flour at home, until I started experimenting with it. All you need is a blender or coffee grinder. Socca Recipe. Here's one of my favorite ways to use chickpea flour! I've had difficulty finding this in the store lately, so I'm happy it's easy to make at home. I posted two chickpea flour recipes this past week, and have another one coming soon. Chickpea Pancakes. I fell in love with these savory pancakes while writing the Winter Reset last year, and figured I had to include a new version on the website, too! This post includes options for sweet or savory pancakes, so you can take your pick. Socca Pizza. This is one of my favorite ways to serve socca, which is also made with chickpea flour! It's topped with Mediterranean-inspired flavors, and is one of my favorite things to meal prep for a fast lunch during the week. Dinner Ideas for the Week Need some dinner inspiration? Here are some delicious ideas to help, if you don't want to mess with the new shopping list option I mentioned above. Sunday: Kale Pesto. My favorite way to eat a whole bunch of kale! Try mixing in half zucchini noodles or half shredded cabbage with your pasta, for even more sneaky veggies in your meal. Monday: Veggie Wraps. I could eat these every single day and never get sick of them. The key to these is the roasted red peppers and sriracha mayo, so don't forget to make those this weekend! It will make the assembly take 5 minutes or less for a busy weeknight meal. Tuesday: Jackfruit Curry. Serve this flavorful curry with cooked quinoa or rice, for a fast and comforting meal. If jackfruit isn't your thing, you can swap it for any other protein you like! Wednesday: Cauliflower Fried Rice. This meal always shocks people who aren't cauliflower fans. It really does taste more like a take-out dish, rather than a big pile of veggies, so it's a great way to sneak more nutrients into your life. Thursday: Vegan Stuffed Zucchini. Here's another delicious way to make a main course out of plants! This stuffed zucchini has Mexican-inspired flavors, with a creamy tahini sauce on top that reminds me of a "cheese" sauce. Friday: Socca Pizza. If you're not sure what to do with chickpea flour, this is it! It's easy to prep, since the veggies and flatbread both cook in the oven at the same time. Make a double batch if you want leftovers for an easy lunch! Saturday: Day off from cooking!
