Hi There,

 

We have fermented foods at nearly every meal. Sometimes it's yogurt in the morning, or a scoop of sauerkraut or kimchi with lunch.  

 

And one of my favorite ferments to make are these brine-pickled carrots.  They're super simple to make, and well-loved by my 4-year old. Plus, it's such a great way to get fermented foods (with all their benefits) onto your plate and into your body.
 

Here's why you should give it a try: 

  1. It's easy to make. You start by packing carrots and spices into a jar, then top it off with a mix of salt and water. Then you wait. Easy.
  2. It's loaded with beneficial bacteria. Fermented vegetables are rich in beneficial bacteria that support gut health and immune system function.
  3. It's delicious. There's a pleasant sourness to these carrot pickles, touched with just the right amount of heat from jalapeรฑo.
