We have fermented foods at nearly every meal. Sometimes it's yogurt in the morning, or a scoop of sauerkraut or kimchi with lunch.
And one of my favorite ferments to make are these brine-pickled carrots. They're super simple to make, and well-loved by my 4-year old. Plus, it's such a great way to get fermented foods (with all their benefits) onto your plate and into your body.
Here's why you should give it a try:
- It's easy to make. You start by packing carrots and spices into a jar, then top it off with a mix of salt and water. Then you wait. Easy.
- It's loaded with beneficial bacteria. Fermented vegetables are rich in beneficial bacteria that support gut health and immune system function.
- It's delicious. There's a pleasant sourness to these carrot pickles, touched with just the right amount of heat from jalapeรฑo.
